Davaz's 2025 Pinot Blanc is Graubünden in a white shirt, but with hiking boots on. Grown on the mineral soils of the Fläscher Feld, it runs straight and true: white peach, apricot, crisp pear, alpine freshness. The palate is generous without shouting, precise without turning serious, with a bright finish that makes you want to put the bottle back on ice... or never take it out again. Asparagus, parmesan and watercress risotto, creamy pasta: it holds its own at the table. A clean, sunny, thoroughly well mannered white.

Flamingo 2025 is the natural rosé that refuses to blend into the wallpaper. Gamaret, Dornfelder and Garanoir, clay limestone terroir at 600 m, ten months on lees in a sandstone amphora, no additives, no sulphites added. In the glass: raspberry colour, vivid red fruit, redcurrant, a light creamy touch and a clean mineral finish. It's fresh, energetic, dangerously easy to drink as an aperitif. Serve with charcuterie, cured ham, fresh goat's cheese or crunchy crudités. A free spirited, precise rosé that gets everyone out onto the terrace, even without one.

Bärhalde 2024 is Hossli Wein's first single parcel Pinot Noir, born from a nearly impossible vintage. Rain, mildew, tiny yields: barely a tonne harvested from more than a hectare. And yet the wine is there, deep, vibrant, remarkably true. Low in alcohol, light on extraction, but full of substance. Black cherry, raspberry, undergrowth, a smoky touch, fine tannins and clean freshness. Aged for a year in used barrels, it keeps the Hosslis' free spirit, with the real bearing of a great wine. Rare, moving, and dangerously drinkable. One to discover before it disappears.

Wegelin's Frassa 2024 is the Grisons Chardonnay in a dinner jacket... but with a Malans accent. Whole bunch pressing, spontaneous fermentation, 12 months in barrel: serious, but never heavy. Ripe lemon, wet stone, a touch of noble smoke; on the palate it's straight, saline, precise, with a finish that holds the line. It brings Chablis to mind for the tension, but Frassa speaks its own alpine dialect. Open with grilled sea bream, seafood, poultry in sauce or morels. A white that calms the table without raising its voice.
