Aargau, Pinot & Co version: a Swiss wine region of hillsides, limestone, and circulating air.

In the Schenkenbergertal, the south-facing, naturally ventilated clay-limestone slopes yield straightforward, ripe, and balanced wines. Further north, on the limestone hills of the Aargau Jura, the heavy soils of Bärhalde (Herznach) impart a frank, unadorned character.

Here, biodynamic (Demeter) or organic methods are used, and winemaking is as close to the grape as possible: spontaneous fermentations, long aging, no filtration, and just a hint of sulfur only when the vintage requires it. And as for orchards, artisanal ciders are made from over 50 old varieties.
