Frassa is the kind of wine that doesn't need to shout to get noticed. A single-vineyard Chardonnay, planted on the heights of Malans, whole-cluster pressed and spontaneously fermented, then aged 12 months in barrel (60% new) to reveal the site without crushing it.
The nose opens on ripe lemon, wet stone, and a hint of smoke. On the palate, clean salinity, vertical freshness, a fine grain right through to a perfectly straight finish. It often brings to mind a great Chablis, but Frassa speaks its own dialect, the one from Graubünden.
With sea bass or grilled sea bream, it's a wonderful match. Poultry in sauce, a seafood platter, or even morels for festive occasions, and Frassa follows along without ever overplaying its hand. It likes dishes that take their time, not the ones trying to say everything in one bite.
Open it when you want to make everyone at the table go quiet, itself included. Frassa isn't trying to convince anyone, it just holds its line. And frankly, that commands respect.
