An ancestral grape, brought back by the Romans, preserved by monasteries, and still today one of Switzerland's greatest rarities. Roman Hermann's Completer is not an exercise in style: it is a powerful, precise mountain white, stemming from the Badwingert — a warm, limestone plot that gives it its breadth and stature.
The tasting opens with a ripe register: yellow apple, banana, dried apricot, vanilla and a toasted veil that reveals the barrel aging. The juice is ample, structured, carried by a present acidity that balances the volume. The texture is dense, almost tactile, with notes of quince and a very long, straight, warm finish — a true marker of the grape.
Open with shellfish, roasted poultry, rich cuisine, or simply for moments when you want a white with breath and a true presence.
A powerful, taut, vibrant Completer — an alpine rarity that advances with calm, strength and precision. The kind of wine that reminds you why this grape is considered a Graubünden treasure.
