A gravity-defying Chasselas that soars above convention. Spontaneously fermented, aged 11 months in barrels, neither filtered, fined, nor sulphited: this wine is unadorned, carried by the energy of its terroir and the gentle passage of time.

On the nose, a disarming clarity: white flower, wet chalk, a hint of almond. On the palate, a straight, taut, almost saline line that lets the earth speak more than the technique. Here, the grape decides. And it has chosen frankness.

Less exuberant than its Allaman sisters, but more immediate, more limpid. Serve chilled, with a fondue that offers a change of scenery, a herb-crusted sea bass, or a no-frills aperitif.

A wine that flies straight, like a shooting star in a late summer sky.
