Here is a Chasselas that breaks free. Macerated for 40 days, aged for 11 months on lees in barrels, without filtration or fining: this wine doesn't seek to please, but to speak. And it has things to say.
From the first nose, it vibrates: candied citrus, dry herbs, an almost medicinal floral note. On the palate, the juice is full-bodied, textured, traversed by a straight and lively tension that stretches into a long, astonishing, persistent finish. Denser, deeper than its Mont-sur-Rolle counterpart, this orange white asserts its character with lunar precision.
This is not a bottle to open on a whim. It deserves a little attention, a seasonal meal, and a few minutes to open up. Perfect with a citrus burrata, a caramelized onion tart, or a vegetarian tagine. Serve it chilled, in a large glass, and let it do the rest.
