Perched above Saxon, Ô Fâya Farm is not an estate like any other. It is a small world created by Ilona Hunkeler: a farm, a vineyard, sheep, donkeys, orchards, steep slopes... and a fierce desire to make wine differently. Here, life is everywhere, and it dictates the rhythm.

In the heart of this Valais hillside, Ilona cultivates her vines as she raises her animals: with respect, patience, and a very sure instinct. Organic farming, living soils, zero synthetics, manual labor... everything is designed so that the vine can breathe. In the cellar, the same philosophy: no make-up, no artifice. Natural fermentations, little or no sulfur, no filtration. The wine is made slowly, simply, as an extension of the place.

The result? Vibrant cuvées, sometimes a little wild, always sincere. Wines with character, light, freedom. Nervous whites, frank reds, oranges full of personality — wines that do not seek to please everyone, but that hit the mark.

Pinot Gris, Heïda, Arvine, Syrah, Cornalin, Gamay,

Lively, free, honest wines. An authentic, unvarnished reading of rural Valais, with a lot of soul.
