A Savagnin that took its time and fully embraces it. Twenty months on lees in well-seasoned barrels, allowing the grape to blossom without ever being tamed. Jordi crafts this white as he lives: free, instinctive, without trying to polish the edges.
The tasting reveals direct fruit — white peach, yellow peach — with a hint of menthol and a spicy touch that reminds us of the aging process. The texture is ample yet clean, textured without being heavy, with a tension that keeps everything in line. The finish is long, vibrant, almost audacious.
Open with a saffron risotto, well-made cured meats, a generous gratin, or an aged Gruyère cheese that demands a white wine with character.
