This Sauvignon Bärhalde 2022 surprises from the first sip: an original two-year aging in old foudres followed by a period in stainless steel to regain all its vivacity. The nose reveals green grapefruit, fresh grass, and ripe lemon.

On the palate, it is clean, taut, with discrete effervescence and a clear salinity. An unexpected but magnificently vinified white — unadorned, but not without depth.

Old wood, fine acidity, and that funky touch of the Aargau terroir.

Drink chilled, with a guitar in the background, with a spicy salad or marinated fish.
