A Sauvignon Blanc aged in the shade of the leaves to preserve all its freshness, grown biodynamically on the clay-limestone marls of the "Sur le Château" terroir. Here, there's no search for exuberance: just a well-controlled grape variety, a vine protected from the sun, and precise winemaking, without maceration and far from oxygen, to let the fruit express itself.
The tasting is crisp and clear: crunchy citrus, fresh grapefruit, a floral hint, and an exotic touch that brightens the mid-palate. The juice is lively, direct, straightforward, driven by a clear tension and aromatic purity that comes as much from the terroir as from the refusal of malolactic fermentation. The finish is fresh, invigorating, almost nonchalant.
