A gentle skin-contact white, where Chasselas meets other white grape varieties for a short infusion on skins. Nothing is fined, nothing is filtered: a free, unadorned, confident work, with aging in multi-use barrels to soften the edges without masking the fruit.
The tasting opens with ripe citrus, fresh apricot, a hint of herbal tea, and a touch of sweet spices. The texture is supple, lightly textured, with that fine tannic grip typical of short macerations. The finish is clean, salivating, almost spicy.
Serve slightly chilled with vegetable dishes, ceviche, aged cheese, or at a dinner with friends where you want to surprise without being disruptive.
