An island encircled by walls and hedges, hidden from view: this is Schönfels, a tiny plot perched on the heights of Uetikon, planted with old Räuschling vines. Erich produces a rare white wine from it, sculpted in clay and limestone, vinified very gently in a 250-liter terracotta sphere. The nose is still a little discreet but hints at saline and citrus promises.
On the palate, the texture is caressing, lively, and surprisingly complex. A high-altitude wine, requiring attention and patience, which will gain even more in intensity. Perfect with ceviche, smoked trout, or a shared silence.
