Flamingo 2025 is Gamaret, Dornfelder and Garanoir grown on a clay-limestone terroir perched at 600 metres, at Jordi's in Villeneuve.
The wine spends ten months on lees in stoneware amphorae, with no additives or added sulphites. The raspberry-pink colour sets the tone: on the nose as on the palate, it's lively and energetic, all raspberry and redcurrant, with a light milky touch and a mineral edge that keeps everything nice and clean.
With this kind of profile, it naturally pairs with charcuterie and cured ham, fresh goat's cheese, or crunchy crudités at the aperitif: the wine's liveliness cuts through the fat, its freshness sharpens the appetite.
This is a terrace wine, to open as soon as the sun comes out a little, with friends who aren't counting their glasses.
