Cab Pét-Nat is Cabernet Sauvignon in sneakers. Forget broad shoulders and heavy oak: here, the grape is agile, free, sparkling. Cloudy garnet color, nose of blackcurrant, bramble, green pepper and violet. On the palate, a dry, lively, structured fizz, with that little bite that awakens. Vinified using the ancestral method, without inputs, undisgorged. It's raw, it's fresh, it's unexpected. Serve chilled, with a wood-fired pizza, a well-attended picnic, or just to break the seriousness of an overly smooth moment. A bubble that growls, but smiles.
