Alpina 2024 is a 50% Chardonnay, 50% Chasselas blend by Jordi under the Les Vins du Vulpin label, made from Valais grapes.
Direct pressing, then ten months ageing in oak barrels, no additives or added sulphites: the time it takes for the two grapes to find their balance.
The Chasselas brings citrus and white flowers, fresh and bright as it knows how. The Chardonnay, meanwhile, had time to pick up a touch of vanilla, hazelnut and butter from the wood. The result: a round, generous white, not just taut and mineral the way a Chasselas alone might have been.
With this kind of profile, roast chicken is a safe bet, especially if the sauce has a touch of cream or mushrooms: the richness of the dish and the roundness of the wine answer each other naturally. Salmon in sauce or poultry with morels works just as well. On the cheese board, an 18-month Comté echoes the wood's hazelnut notes nicely.
The right moment to open it? A Sunday at the table, when the meal runs a little longer than planned and no one really wants it to end.
