Hydrocanon is a high-voltage "blouge" wine. Chasselas vinified naturally, but with a twist: aged on lees of Malbec, Chardonnay, Pinot Gris, Dornfelder, Gamaret, and Garanoir. The result? A UFO. Nose of zest, graphite, crumpled herbs. On the palate, it's dry, saline, angular, with a surprising tannic touch. Not quite white, not exactly orange, even less red. It's an echo wine, a vibrant cannon between colors. Serve well chilled with raw dishes, fatty textures, or an aperitif that seeks to break free from convention. Hydrocanon isn't a style; it's a jolt.
