The first sip of Bothmarhalde Chardonnay 2023 is like a flash of minerality in the mountain air. Vines perched at 670m, clear wines, spontaneous fermentation followed by 12 months in barrels (60% new): a sober and powerful elixir. On the nose, notes of lemon, ripe peach, and luscious pineapple, enhanced by a spicy balsamic touch. On the palate, the saline tension is balanced by a ripe and vibrant body. This "green and mineral" aspect evokes a dry white that is both elegant and grounded. Perfect with shellfish, a ceviche, or tarragon chicken: a white that refreshes the table without dominating it.
